The expression ptomaine poisoning used to be used for this condition because it was thought that germs acting on food produced poisons called ptomaine. This term is no longer used for food poisoning. Food may occasionally contain actual poisons like arsenic administered with malicious intent. The commonest form of food poisoning is that due to invasion of food by bacteria like the staphylococci or the salmonella organisms. The germs may produce poisons or may be poisonous in themselves. They may get into food from an infected wound, as from the finger of a cook or a baker. Food poisoning manifests itself by sudden abdominal pain, nausea, vomiting and diarrhea, any time from four to thirty hours after the food was eaten. Along with these symptoms come headache, cold sweat, shivering and occasionally, double vision. If death results, the cause is either shock or the great loss of water and salt associated with the vomiting and diarrhea. Typical of food poisoning is the sudden attack of half-a-dozen or more people who have all eaten the same contaminated food.
